What I Eat In A Day (Vegetarian)

Okay, quick disclaimer: I am by no means a nutritionist - this is just a compilation of ideas for you when you’re wondering what to make for your next meal. The suggestions below are super easy and healthy, and will hopefully inspire you to get in the kitchen and have some fun!

Side notes: I eat mostly plant-based but will have a little chicken or cheese mayyybe once a month. I’m also loosely following the bean-protocol to help with gut-health and am focusing on eating foods that will balance out my hormones. Finally, I typically fast until ~3pm daily (note: fasting is not for everyone - please do your research), but I’ll give you some breakfast ideas if you like to eat early.

Breakfast ideas:

  • Celery juice on an empty stomach

  • Decaf coffee with soy creamer * switching to decaf has helped my energy levels immensely

  • Oatmeal with walnuts, blueberries, maple syrup and raisins

  • Chia pudding made with unsweetened oat milk and a little maple syrup

  • Hard-boiled eggs

Lunch ideas:

  • Black beans, wild rice, tomatoes, jalapeños, melted vegan cheese + sea salt/pepper

  • Quinoa with tofu, tomatoes, jalapenos, corn, broccoli, cauliflower, an egg on top, and vegan pesto on a bed of mixed greens

Dinner ideas:

  • Spaghetti squash with vegan butter, sea salt/pepper

    • Chop in half, scoop out the insides, rub generously with olive oil, cook for 30+ mins at 450’F

  • Roasted vegetables: broccolini, cauliflower, asparagus, sweet potatoes, eggplant, garlic…whatever else you want!

    • Mix veggies in a bowl with olive oil and whatever spices you want and then spread them out on a baking sheet. Cook at 450’F for ~30 mins // add the garlic at the 15 min. mark

Snack ideas:

  • Popcorn sprinkled with nutritional yeast or cinnamon

  • Spearmint tea with honey and unsweetened milk * helps to balance hormones which can improve skin!

  • Dark chocolate chips with walnuts

  • Chia seed bars from Trader Joe’s

  • Olives * they help with sugar cravings

  • Mixed berries or fruit!

  • Dates stuffed with brie or Jarlsberg cheese
